- Preheat smoker to 235 degrees.
- Place ribs in smoker. Smoke for 3 hours.
- Remove ribs, make a foil pouch with heavy duty foil. Coat ribs with BBQ sauce, place in pouch. Pour in a can of beer. Seal pouch tight.
- Place pouch back into 235 degree smoker, smoke another 2 hours.
- Remove ribs from pouch, discard pouch and liquid. Coat ribs again with BBQ sauce, place back into 245 degree smoker, smoke another 2 hours.
- Remove ribs, let sit 20 minutes. Cut ribs into singles. Serve with baked potato, baked beans and salad. Or whatever you prefer.
